It’s been a hectic day typing up client reports, talking with clients on the phone and answering emails.
It’s so easy to become tied to the computer on days like these. When you’re knee deep in work, time flies and before you know it you’ve attended to the whole world, but completely neglected yourself.....no food, no water, no exercise....nada!
BUT, (and it’s taken me a while to learn this!) if you want to function optimally (& boost your long term health), you just have to discipline yourself to take 10 minutes to buy or prepare some nourishing fuel for your brain and body, and most importantly take 20 minutes away from your desk to CALMLY, enjoy your meal at a leisurely pace. No rushing, no stressing, no hovering up your food. If you are not in a relaxed state of mind and you do not chew thoroughly, your digestive processes will be severely hampered. I do not over-exaggerate when I say that eating mindfully and slowly could be the one action that turns your health around.
Anyway enough nagging(!), my yummy lunch took 10 minutes to prepare (25 minutes to munch on), so if you’re looking for a speedy lunch idea for those crazy busy days, check this out….(and yes, I ate the whole bowl….followed by 2 fresh figs….which a while later, gave me another good reason to get up from the computer and rest my eyes!:)
Ingredients for the ‘quickie’ salad:
2 handfuls of organic rocket
2 handfuls of sunflower sprouts
1 large avocado, cut into chunks
6 radishes, sliced
1 organic carrot, grated
1 organic courgette, grated
4 thin slices of red onion
For the dressing:
2 handfuls of mixed herbs – fresh parsley, mint and coriander
4 tbsp of extra virgin olive oil
1 tbsp apple cider vinegar
1/2 tsp raw honey
NB: If you want a little more protein & fat & intense flavour, you can add 1 tbsp of good quality shop bought pesto to your dressing.
Method: Chop & grate the ingredients. Toss all the vegetables in a bowl and dress with the vinaigrette. Add a pinch of ‘happy’ or ‘relaxing classical’ music and munch away SLOWLY!
